We got tired of choosing between full-strength gin and something pretending. Halving a gin's strength is easy. Doing it without losing the gin is not — alcohol carries aroma, so most attempts end up thin and flat. Ours took a long time to get right, and holds IWSC and International Spirits Challenge bronze medals. Pour a double over plenty of ice, top with a good tonic, add grapefruit. For people drinking a little less who don't want to drink anything less interesting.

What's in it:
Juniper, coriander seed, angelica root, citrus peel and a short list of supporting botanicals, distilled together in a one of the oldest working copper stills in the UK using the London Dry method — everything drawn from the distillation itself, with nothing added afterwards. That's the whole recipe. No sweetening, no colouring, no flavourings stirred in at the end to cover the gap where the alcohol used to be. The liquid is naturally clear and pale, and it should be.
Bottle and closure:
70cl flint glass with a T-stopper made using materials derived from bio-ethanol. Both are recyclable — stopper separately from glass.
Serving:
Best served long. A 50ml measure over plenty of ice with 150ml of a good Indian tonic (a slimline option if you are after a 'light' version of the classic G&T), garnished with a wedge of pink grapefruit or a twist of lemon. Works in a Negroni or a Martini if you want the classics at a gentler strength.
Storing it:
Keep it upright, somewhere cool and out of direct sunlight. Unopened it will keep for years. At 20% ABV there's less alcohol holding the aromatics in place than in a standard gin, so once opened we'd suggest drinking it within three months while the botanicals are at their brightest. Refrigerate after opening if you'd like to stretch that a little.
