    We have gathered together a versatile collection of wood smoking dust products in a range of flavours to suit most food smoking recipe ideas.

    Dust is mostly used for cold smoking where low temperatures are required, or for long slow hot smoking projects, and the consistency ranges from a fine particle to a more feathery, bittier flake. The smaller size of the dust gives you optimum smouldering, and the production of wonderful rich smoke aromas to enhance the flavour of your food. Perfect for use with the ProQ Cold Smoke Generator or with stainless steel hot smokers.

    How to use - Instructions for use will vary according to which equipment you are using, however, here's a quick guide:

    For stainless steel smokers - use a heaped tablespoon and place in a pile in the centre of the base of your smoker.

    For the Cold Smoke Generator - you will need 100g dust to fill the smoke generator. Damp the dust down slightly and ensure the top rim of the generator is clear so that the smouldering does not 'jump tracks'.

    For other cold smoke cabinets - lay the dust in either a grid or coil formation on a metal or aluminium foil base in the bottom of your cabinet. Light from one end.

    Depending on the depth of smoke flavour you prefer you may decide to use more or less dust or opt for a stronger flavour. Have fun experimenting!

    Wood Dust Collection: flavours and tasting notes:

    Oak - a strong smoke flavour which works well with most types of food including oily fish such as salmon, red meats and hard cheeses

    Hickory - a strong hardwood ideal for red meat, mackerell and commonly used with pork

    Beech - a milder hardwood which complements more delicate foods such as fish and poultry

    Maple - a medium strength hardwood which works well with pork, chicken and trout

    Apple - a medium sweetish flavour perfect for pork, poulty and cheeses

    Cherry - sweeter and slightly milder than apple and an ideal partner for game and red meats

    All Hot Smoked woods are either FSC approved or sourced sustainably from managed estates. The wood is 100% natural and untreated. As this is a natural product, dust size and colour can vary according to the different batches we source.


    Supplied in 500g recycled brown paper bags wtih colour coded resealable jute twine fastening.

    The approximate dimensions of each bag are H17 x W14 x D7cm.

    The wood is packed according to weight so the filled bags can vary.
