Great Glen Charcuterie is a family business established in 2002 by us, Jan Jacob and Anja Baak after we moved to Scotland with our family from the Netherlands.
We now live and work in the little village of Roy Bridge, set deep in the rugged Scottish Highlands where deer freely roam the hills around us.
We use sustainably sourced wild venison from the surrounding area. Our products are produced by hand and air dried because we are passionate about preserving as much of the unique and unrivalled flavour of wild venison as we possibly can. Venison Charcuterie is a healthy alternative to more common pork based charcuterie as it is low in fat and high in protein. One of the great things about charcuterie is how versatile and convenient it is on its own when you fancy a delicious snack, or want to entertain guests with canapés or antipasto.
