Bath Soft Cheese has a creamy and mushroomy flavour with just a hint of lemon. It’s also soft and yielding, with an ivory interior and a white bloomy rind. This is the soft cheese for the cognoscenti.
You will start with hot drinks and pastries to set you up for the cheesy day, then it’s to work, learning how to make and separate the curds from the whey. As you wait for the curds to settle, you will not be sitting on your tuffet, but engaging in an exclusive tour of the cheesemaking and maturing rooms. Then it’s back to check on the curds and get to grips with ‘moulding up,’ as you make the international, award-winning Wyfe of Bath cheese.Lunch is next served in the award-winning Bath Soft Cheese Co. Café, where there will also be a cheese tasting. Among their other artisan cheeses, this company makes a spectacular Somerset Brie and a Bath Blue. To finish the day, you will be making some fresh mozzarella to take home with you (it’s all in the stretch), and your Bath Soft Cheese (the one you made earlier), will be sent on to you once it has matured.
