This makes a fantastic gift for the experimental outdoor cook and will introduce a whole new world of flavours to the entire family! Hot smoking is outdoor cooking's answer to slow cooking - think pulled pork, hot smoked mackerel or super juicy whole chicken, whilst cold smoking is shorthand for flavour enhancement.

To hot smoke in the Frontier smoker use a good quality charcoal briquette which is lit in a charcoal basket in the base of the smoker. Wood chips which will deliver the smokey flavours are placed directly on the white hot coals where they will begin to smoulder. Soaking the chips first can enhance the smoke generation.

The two cooking compartments, or stackers, are then added along with the smoker's secret weapon, the water pan. This is filled with warm water and a dash of wine or cider plus fresh herbs. Food is placed on the grill racks, the lid added and the smoker left to work its magic. Unlike a barbecue very little intervention is needed. Cooking times are approximately double those of a conventional oven at half the temperature. The Frontier can also barbecue, roast and steam.

To cold smoke the ProQ Cold Smoke Generator is filled with just 100g of wood smoking dust, placed in the base in place of the charcoal and lit from an outer corner. The dust smoulders gently as it travels along the mesh channel delivering cooled aromatic wood smoke. Food is placed on the grill racks and the lid put in place for the duration of your smoking project. Cold smoking for meats and fish is combined with curing prior to smoking using a salt and sugar mix to remove moisture. The wood smoke is the final part of the process sealing the exterior of the food whilst also adding flavour.
