The Eco Cold Smoker Set is a ready-to-go kit for those wishing to experiment with cold smoking at home. Cleverly constructed in cardboard, the Eco Smoker is easy to put together, lightweight and compact for storage. It includes three metal grill racks which are robust enough to hold meaty bacon joints.
The smoke flavour is generated by the ProQ Cold Smoke Generator which, from only 100g of pure wood dust, will create cooled aromatic smoke for up to 10 hours. The wood smoulders gradually producing minimal heat and no open flame so its an ideal partner for the Eco Smoker.
Cold smoking is a technique which combines curing and smoking, not only preserving food but also adding multiple flavour dimensions. Popular dishes include smoked salmon, cheeses, bacon and pancetta. The Eco Cold Smoker Set is supplied with detailed instructions and a range of cold smoking recipe ideas. The set also includes three 100g packs of wood dust, two in oak and one in beech, giving you both strong and more subtle smoke flavour options as well as up to 30 hours cold smoking time.
The Eco Smoker, despite its cardboard construction, is surprisingly robust and can be used again and again for cold smoking ideally in a covered ventilated area such as a garage. Take care not to get the cardboard wet and it will give you many hours of cold smoking service.
The Eco Smoker has a double wall cardboard construction with clever fold-out brackets holding chrome plated grill racks.
