The crystallised jelly or วุ้นกรอบ(TH) is a traditional Thai sweet that resembles the Japanese sweet Wagashi.
We use high quality agar-agar powder which makes the the jelly's texture firm while sugar is the main ingredient to preserve this sweet. We has developed the amount of sugar use to create subtle sweetness in every desserts so customers can enjoy them with a cup of tea.
Traditionally, this jelly was widely seen in small dice shapes in bright colours but has been slowly forgotten. It has just recently become popular again in social media among the young Thai generation.
The final process of making can be done by sun-drying or leaving at room temperature for 2-3 days until the sugar become crystallised and creates a crispy texture outside but leaving inside chewy. However, this method is long-process and London’s weather does not allow us! So, we use a dehydrator machine to dry them overnight. It and gives them a perfect crystal coat and is very hygienic
