During the day we will cook a variety of recipes to develop your skills in the three different cooking techniques, including Smoking (BBQ Pork & Beef Ribs, Hot Smoked Sea Trout & Jerky), Direct Grill (the Perfect Steak & BBQ vegetables) & Roasting (butterflied leg of lamb and how to butcher).

LOCATION: This course will be run at Forty Hall Farm, Enfield, an organic farm just off junction 25 of the M25.
DURATION: 7 hours (10am-5pm).
DATES: Courses run Saturday or Sunday, Monthly April to September
WHAT YOU NEED TO KNOW
The day starts with a warm welcome & introduction to the three key cooking techniques (direct grilling, indirect roasting, smoking) and a full rundown of what equipment you need (different types of BBQ's/smokers) & how to set up.
We'll then cover a detailed discussion of different types fuel and wood (including how to match different woods to different ingredients), BBQ setup, practical skills and recipes, and a full Q&A.
At the end of the day you'll leave with a full set of recipes, course notes & BBQ tips and your own set of BBQ bear claws for pulling pork- all packed into a lovely jute bag. The perfect food gift!
Breakfast & Lunch will be provided (part of your BBQ), as well as refreshments and a celebratory glass of beer or wine at the end of the day.
For health and safety reasons, please wear closed-toe shoes. Aprons and all ingredients are provided - just bring yourself! Minimum age 16. Parking is freely available at the farm. To ensure that you receive personal tuition each course caters for a maximum of 12 people.
